Not sure if this is viemu doing this or word, but if I have a long line of text,
line break inserted

> 100oddchars/
> bla   

another case is this - which looks to be hypen related

> bla-
> blablabla100charsmore

Any ideas how to stop any line breaks from being inserted? My guess is this
is the addition of the "> " in the email replies. Or it could be viemu.

This is probably not related to ViEmu at all, but to Word & Outlook.

Can you try to disable ViEmu and see if it still happens?

Indeed, your description above seems to be realted to hyphenation when re-wrapping when auto-quoting an email with '>'. ViEmu does nothing of this, so it's unlikely to be the culprit!

There are probably rules to control this behavior in Outlook, you can probably configure it not to garble your text.
